Gluten Free Pasta Recipe - Alfredo Sauce

gluten free sauce recipeA couple of weeks ago Dayna mentioned she'd like to know how to make alfredo sauce. Well, I learned! I was intimidated because I've heard cheese sauces are tricky but it's super easy.

There are 2 versions I've tried: a regular one and a lower-fat one that was less rich but still tasty.

For the regular one, use:

1/4 c. butter
1 c. heavy cream
1 clove of minced garlic or a shake of garlic powder
1 c. parmesan cheese
1/2 c. mozzarella cheese

I heated the butter, garlic, and cream on med-low heat until the butter melted, then stirred in the cheese until it melted. Threw in a bunch of cracked pepper, a few shakes of salt, and a splash of the wine I was drinking. I let it heat for a minute, while stirring, and served it over penne rice pasta since those are the only noodles I had. I sprinkled some parsley over it one time, and some Italian seasonings another time. Both tasted good.

For the lower fat one, I used:

3 T. butter
2 T. flour mix
1 c. milk
same amounts of garlic & cheeses

I melted the butter, then stirred in the flour until it formed a paste. I slowly stirred in the milk and heated that up for a minute. I threw in the cheese and other ingredients the same way as before. If you are drinking wine (as I do when I cook), splash a bit of that in too. The wine will help to keep the mixture smooth. Since it's a white sauce I would use white wine. Put it over pasta and enjoy!

Oh- for a non-veggie version, saute some chicken in a bit of olive oil and Italian seasonings and toss that with the sauce before you serve it.

What's the "flour mix" you use to make the roux for the lower-fat version? I have some quinoa flour, brown rice flour, and coconut flour at home. Would any of those (or a combination of those) work? I'm new to the gluten-free world, and I am wary about which flours will work in certain recipes!

I'm 12 and GF and it was my turn to make dinner so i found this recipe made it added chicken breasts and noodles OMG that was sooooooooooooooooooooooooooooooooo good my whole family asked for the recipe.

Oh, my.God! like this was the best thing I've had in a long time. freakin delish! I made it exactly as you did w/the wine and pepper and salt over gluten-free Fettucine noodles with garlic/salt/pepper in butter browned chicken bites and broccoli! ugh. I cannot ever make this again though, so freakin fattening-ONLY for special occasions. will try the low-fat version next time. it rules!

I have really been slowing down in these last days of pregnancy. I am cooking fast, easy meals that do not require much thought, energy, and time. My computer is also broken, so I am using my husband’s computer when he is not working. I am hoping my computer can be fixed! On the mommy front, my toddler has started walking! Yay! I have been extra busy running after him. I am really happy that he is walking now because both Jude and I were both starting to get frustrated. The poor kid just did not want to fall. I am sure he will be a pro by the end of this week. The other good news is that Jude is starting to grasp the concept of cleaning up. I thought it would be months before this occurred to him. The first thing he did was try and help me fold the laundry and put in on the pile I was working on- normally, he just gleefully throws everything on the floor that I have just folded and put in piles to put away. Later that day, I asked him to please put back all of the placemats he had just taken out of the basket. I really thought I was just practicing my mommy's voice, but he scampered back and started putting the placemats back in the basket. Unbelievable. I guess you never know when something is just going to click!

ITALIAN SAUSAGE SPAGHETTI

I made Italian Sausage Spaghetti tonight with Tinkyada pasta. My husband and I really enjoy pasta now. He never really enjoyed it before because he always felt sick and too full after eating pasta too- and he doesn’t have gluten intolerance! I browned some gluten-free Italian sausage, made my marinara sauce, and threw it over the Tinkyada spaghetti. Voila! If only every night were that easy.

Pasta..that great easy yummy meal..thank goodness there is a good substitute.

Walking…big move..you will now be on your feet following him everywhere! Just think of it this way, it will be great..you will work off the pregnancy weight faster. ;)

Gluten Free Meatballs Recipe Baked Ziti Penne

I have been nesting all day. My husband caught me cleaning the baseboards in the kitchen at lunch on my hands and knees. After I finished, I decided that I had enough energy to try my hand at gluten-free meatballs. Yum! I decided that baked ziti with meatballs sounded delicious, but I could only find a gluten-free penne at Harris Teeter. Not to be discouraged, I replaced the traditional ziti with penne. I made a homemade Chunky Tomato Sauce from items I had on hand, but feel free to substitute a GF marinara sauce to save time. This was a great recipe for my toddler because he could pick up and eat everything in the dish. He especially loved the meatballs and the bell peppers in this recipe, which made it worth my while!

CHUNKY TOMATO SAUCE
This is by no means the best tomato sauce in the history of the world. It is, however, one that can be made with just a few of the ingredients I keep stocked in my pantry.

2 28 oz. cans of whole tomatoes

2 cloves of garlic

1/4 cup of onion

1/2 teaspoon of oregano

1/2 teaspoon of balsamic vinegar

Red Pepper Flakes

1 Tablespoon Extra Virgin Olive Oil

Directions:

In a medium saucepan, heat oil over medium heat. Saute onion until almost done, add garlic and oregano and cook briefly (about a minute). Add tomatoes and crush them into the pan. Add balsamic vinegar and a dash of red pepper flakes. Simmer, stirring occasionally, until thickened, about 15 mins. Season with salt and pepper.

GF MEATBALLS

1/2 lb. ground beef

1/2 lb. ground pork

1/2 cup gf breadcrumbs

1/4 cup parsley, chopped

1/4 cup parmesan cheese

1 egg

1 Tablespoon olive oil

1 medium onion

1/2 teaspoon dried basil

1/2 teaspoon dried oregano

2 cloves of garlic, minced

1/2 teaspoon salt and 1/4 teaspoon freshly ground pepper

Directions:

Preheat the oven to 425 degrees. Grease two 3 qt casserole dishes (or two jelly roll pans) with olive oil. In a medium saucepan, heat the olive oil over medium heat. Saute the onion until almost translucent, then add garlic, oregano, and basil and cook for about a minute. In a large bowl, combine the onion mixture, gr. beef, gr. pork, egg, breadcrumbs, parsley, parmesan, salt, and pepper. Form about 4 dozen small meatballs- about a tablespoon size each and place them in the casserole dishes. Cook the meatballs 10-12 minutes. To make sure they don’t stick, I gently lift them with a spatula about halfway through the cooking time.

FINALLY, the BAKED PENNE WITH MEATBALLS

1 red bell pepper

1 green bell pepper

8 oz. penne

GF meatballs

Chunky Tomato Sauce

1.5 cups mozzarella cheese

Directions:

Turn the oven down to 350 degrees. Cook 8 oz. of pasta according to the package directions. I used DeBoles Brown Rice Penne. Saute 1 red pepper and 1 green pepper until tender- about ten minutes. Add the bell peppers and the meatballs to the chunky tomato sauce/marinara sauce and simmer for ten minutes or until heated through. Combine the chunky tomato sauce mixture with the penne in a 3 qt casserole dish. Top with mozzarella cheese and heat in 350-degree oven 25-30 minutes or until casserole is bubbly.
